Vanilla sponge taste test

My mum is making a birthday cake for a friend next week and she has asked for a vanilla sponge that is ‘as light and fluffy as possible’. So over the weekend we did a taste test of three recipes. Cake number one was definitely the best tasting and also very light and airy - the winner.
