Sea bass served with ratatouille, crispy basil leaves and basil oil - again!

As I mentioned in my last blog post, this dish is going to be the started for my course work menu. Ratatouille is a classic French dish which was originally a peasants dish but now very popular. I felt as if it needed something else to add to the dish so I decided a protein would be suitable, I wanted the protein to match the fresh vegetables so I feel as if sea bass was the best option. They worked really well together.


This is my second practice of this dish I I thought it went pretty well. I'm going to have to think of a neater way to present the basil oil - presentation is something I need to work on.
