My Dad cooks a Sunday roast nearly every weekend. They are always delicious but my absolute favourite is when he does roast chicken. The smell drives me mad when it's cooking and it just so yummy and comforting. He was away this weekend so I took over and helped cook a roast chicken with mash and stir fried green veg. Oh and gravy because you can't have roast chicken without gravy. I think the secret to roast chicken is not to overcook it - an internal temperature of 75oC is perfect. And plenty of seasoning for the crispy skin.
