Finally my exams are over so I am free to enjoy my Summer! I’ve travelled to the Isle of Wight festival but before living on pizzas and burgers for the weekend I have stopped at The Hut on Colwell Bay which is an iconic seaside restaurant that specialises in fresh local seafood.
I chose a starter of seared scallops and pork belly with an XO dressing that was an amazing full of flavour dish with such simple ingredients. The scallops were pan-seared to achieve a caramelised, golden-brown crust with a tender, juicy interior. The pork belly is was slow-cooked until tender, then seared to add a crunchy layer. The salty richness of the pork was amazing with the sweet scallops.
The XO dressing finished it off really well. XO sauce is a spicy seafood sauce originating from Hong Kong, made with dried seafood such as scallops and shrimp, along with chili, garlic, and cured ham or bacon. In this dish, it was used as a dressing to add umami and spiciness.
