The main course for my Food & Nutrition coursework is Chicken Ballotine served with hassleback potatoes and glazed carrots.
This dish took a lot of experimenting as I wanted to perfect it both for the taste and presentation for my practical exam. I originally started with an Indian inspired chicken ballotine but found it dry and lacking flavour. It also looked a bit bland on the plate. After doing a bit more research I opted for a more authentic option stuffing the chicken with prosciutto, mozzarella, caramelised onions and basil. Still not perfect but certainly getting there - I know have to concentrate on rolling the chicken a bit neater so the filling is in the centre.
The potatoes and carrots were spot on as a side dish and the watercress finished off the dish with some colour.
Overall I'm now really happy with this dish.
