On my holiday to northern Norway we spent a few nights on the remote Svalbard Islands and in the town Longyearbyen. The Svalbard Islands are located between Northern mainland Norway and the Arctic and are one of the most remote inhabited places on earth. And of course the first meal I had was a burger. It was a beef burger with mushroom, melted cheese and the restaurant’s own special burger sauce. I thought the black charcoal bun was very interesting as Longyearbyen is famous for being a coal mining town. The burger was very juicy, maybe too juicy as it was clear the burger patty hadn’t been rested so juice was flowing making sloppy mess towards the end. However the burger sauce was a special sauce I won’t forget.
